I’m kicking-off fall with a batch of pumpkin chocolate chip cookies. Now, these are not the thick, dry cookies at the supermarket. These are soft, cakey, and moist for days. My family has been making a batch every October to share with friends and neighbors to welcome the start of Fall. This year the tradition continues and luckily, the recipe couldn’t be simpler. All the ingredients go in the same bowl, in order. Mix to combine and done! The dough isn’t as thick as traditional cookies so it is easy to do by hand.
