I have been on the many year journey to find a chocolate chip cookie that is the perfect one for me. Some are too soft, some too sweet, some too flat, and some too dense. Finding the right mix of things is actually pretty tricky. All cookie dough has the same few ingredients but somehow the different ways you mix them together and different proportions can change everything! I have finally done it, I found my cookie. I use a mix of semi-sweet and milk chocolate. I brown half the butter, although you could brown all of it if you like that kind of thing. I refrigerate the dough for at least 30 min and then I shape them in a specific way. Sprinkle some flaky salt on top and you have it. My perfect cookie. I hope you enjoy!

In a small saucepan, melt 1 stick of butter on medium. After it is melted, leave it on the heat. It will first bubble then it will start to foam. It is during the foaming stage that browning will start to happen. This is a little tricky since you can’t see through the foam. Stir the butter and slowly the foam will start to change to slightly brown. Use your nose and when you smell a nuttiness then pour your butter into a bowl. Some people like lightly browned butter and some a little darker, this is up to your preference. I like a darker browned color/taste. When you pour it out the butter should be a medium brown and there should be brown bits at the bottom. This is the dairy solids that have caramelized, you want those so get them all in your bowl to cool.
